Our Story
We are proud to be a true Tex-Mex scratch kitchen. Since 1991, our family has been preparing fine Mexican cuisine for our guests, serving communities across Texas and Florida with an unwavering commitment to quality.
We insist on using only the freshest and finest ingredients in every dish we create. All of our beef, chicken, pork, seafood, and produce are fresh—never frozen—and sourced from approved, reputable suppliers operating under USDA-governed HACCP programs to ensure safety, consistency, and the highest standards. Even our produce is hand selected daily to ensure peak freshness.
Our coastal oysters are hand selected for size and quality from Prestige Foods, one of the select few certified oyster fisheries, harvested from Louisiana coastal beds and purified through a water-blast cleaning process for sanitation and safety.
Our tender, aged beef and poultry are hand carved in-house, never frozen, and vacuum-tumbled with seasoning to guarantee exceptional flavor in every bite. All fried items are prepared exclusively in beef tallow, rich in stable saturated fats and naturally occurring vitamins A, D, E, and K.
Our enchiladas are hand rolled to order and topped like all our entrees with cheeses that are sliced and grated daily. Our barbecue is slow smoked to perfection in our very own smokehouse using a blend of hickory and oak for a tender, distinctive flavor.
Join us in the Tortilla Room and watch as we prepare fresh, homemade tortillas throughout the day. Using traditional Mexican recipes and techniques, we create the perfect balance of structure and softness, enhanced with a subtle hint of Texas smokiness and served hot from the grill.
